Pasteurization
For canned beverages requiring pasteurization, we use our chamber pasteurizer. A temperature probe pierces the lid of a sacrificial can. Drenching hot water heats all 960 cans simultaneously until the temperature of the drink inside hits 72 degrees. Temperature target reached, the chamber does an about face and cools the cans back down to fridge temp. The pasteurization process serves as a kill step, so-called because certain harmful bacteria cannot survive it.
