Cold-chain beverages such as coffees and lattes whose pH is slightly higher than that of carbonated water can also be pasteurized to assure sterility and extend shelf life.

When C02 dissolves, carbonic acid is produced - a weak acid which lowers the pH and is responsible for sparkling water’s pleasingly tart taste. Thus carbonated water is a naturally preserving medium, permitting shelf stability with a minimum of additional preservatives.
