Nitrogen Dosing

When the very cold liquid nitrogen ( -320 degrees Fahrenheit!) hits the surface of the drink being canned, the nitrogen changes state to become a gas, displacing other gases and pressurizing the can if sealed immediately. Think of nitrogen dosing as a way to displace air from your can before sealing it up. The expanding nitrogen plumps up your can as well. The nitrogen doser is very fun to watch as the “fog” seeps out in wisps and floods the local area.
